Last night I was going through the pictures on my camera because I wanted to delete some of them and I came across two funny pictures. Curbris is always telling me that Xanyae looks nothing like him and acts nothing like him. While I found proof to show him that he was wrong.
Their is no more deny it, Xanyae looks and acts just like him.

5 Months
Yesterday Xanyae turned 5 months. He has grown so much and so fast. He is sitting up really well now. He also does not like to sit still. He thinks he needs to try to climb on you or always trying to move. I was getting ready to take him swimming for the first time today, so I took a few pictures of him in his swimsuit.

Cousins and Temple
On Friday my cousin was in town, so she came over for a visit. Her youngest son, Cole, is only a few weeks younger than Xanyae. It was our first time to meet Cole and he was a cutie. He weighs just as much as Xanyae and they are pretty much both the same length. The funny thing was that even thought they weighed them same their built was totally different. It was great to spend time with them and cant wait to see them again.

On Saturday we headed to Thatcher to go to the Gila Valley Temple Open House. Curbris had to work so me and the kids went up with the rest of my family. It is about a 3 hour drive , but worth the trip. The temple was beautiful and I was happy that my kids got to go inside. I think their favorite part was putting on the white socks over their shoes.

Recipe Monday
Today's recipe is for Skillet Enchiladas. I love enchiladas it really is a comfort food for me because I grew up eating them a lot. When I came across this recipe I knew I had to try it because it was a quicker way to make enchiladas. I have made this recipe a lot and I have changed between red and green sauce. I also have tried it with chicken or beef and overall I have liked all the variations I have tried.
Skillet Enchiladas
1 pound ground beef
1/4 cup onion, chopped
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10 ounces) enchilada sauce
1/2 cup milk
2 tablespoons canned chopped green chilies
Vegetable oil
8 – 10 corn tortillas
2-1/2 to 3 cups finely shredded cheddar cheese, divided
Directions
In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the soup, enchilada sauce, milk and chilies. Bring to a boil. Reduce heat; cover and simmer for 20 minutes, stirring occasionally. Meanwhile, in another skillet, heat 1/4 in. of oil. Dip each tortilla in hot oil for 3 seconds on each side or just until limp; drain on paper towels. When meat mixture has simmered for 20 minutes, top each tortilla with 1/4 cup cheese. Roll up and place over beef mixture, spooning some of mixture over the enchiladas and sprinkle with remaining cheese. Cover and cook until heated through and cheese is melted, about 5 minutes. Yield: 8- 10 enchiladas.

Recipe Monday
Today's recipe is for an easy Marinara Sauce. Recently my favorite grocery store had a sale on canned tomatoes so I really stocked up. Since I had a ton of tomatoes I went around looking for marinara and pasta sauces to try. I came across this recipe and everybody loved, the girls even had seconds which is a shock. It is super simple to make and doesn't take a lot of ingredients.
Easy Marinara Sauce
1 tablespoon olive oil
2 garlic cloves, finely chopped
1/2 small onion, chopped
1 (28 ounce) can diced tomatoes, undrained ( I used two 14.5 oz cans of diced tomatoes and I also added a 14.5 oz can of stewed tomatoes.)
2 tablespoons chopped fresh basil or 1 teaspoon dried basil leaves
2 teaspoons chopped fresh oregano or 1/2 teaspoon dried oregano leaves
1/2 teaspoon sugar
1/4 teaspoon salt
1 dash pepper
hot pasta
fresh-grated parmesan cheese
Directions
In a large saucepan, sauté garlic and onion in olive oil until onion is tender.
Stir all remaining ingredients in with onion mixture; heat to boiling; reduce heat and simmer, uncovered, for 45 minutes, stirring occasionally.
Carefully puree hot sauce in in a food processor or blender; serve hot over cooked pasta and top with fresh-grated Parmesan cheese.

I love Being A Mom!
I love Mother's Day it is always a special day and this year was extra special. I received a lot of nice gifts, but a few of my favorite things about this Mother"s Day were not gifts. I woke up to my kids giving me hugs and kisses. Karma is primary now so she got to go up front and sing for me. She knew some of the words and for the words she didn't, she just moved her mouth it was so cute. Than my dad and Curbris made us a wonderful dinner and we didn't have to do anything. Curbris also spoiled me with some new cookbooks and jewelry. I told him not to spend to much money, but of course he had to go all out.

Getting So Big!
We are almost halfway through the year and my kids are changing and growing a lot.
Karma will be 4 in less than 2 months and I cant believe how fast 4 years have gone by. She is a good big sister and sometimes a big helper. We are looking forward to signing her up for ballet at the end of the summer.
Sadie is growing more and more each day. She will start potty training this summer and I am hoping since I did it last summer with Karma it will be easier the second time around. Sadie is also a great big sister and a good helper at times. My little princesses, I don't know what I would do without them.
Xanyae is growing like a weed and I cant believe that he is almost 5 months. He has started to eat cereal and he likes it somewhat. Curbris feed him the first time and he wasn't exactly sure what was going in his mouth, but he caught on really quick. He also has started to sit up all by himself. I was really surprised cause I sat him down and instead of following back or forward he just sat their. He did it a lot earlier than the girls did.

Recipe Monday
Today's recipe is a slow-cooker recipe for Mexican Pulled Pork Tacos. This recipe is really good and it can feed a lot of people.
Ingredients
1 medium-size onion, coarsely chopped
1 boneless pork shoulder roast or picnic roast (about 3 1/2 pounds)
1 medium-size sweet red pepper, cut into 1/4-inch squares
1 medium-size sweet green pepper, cut into 1/4-inch squares
1 can (14.5 ounces) jalapeño-flavored diced tomatoes
2 teaspoons ground cumin
11/2 teaspoons garlic salt
11/2 teaspoons dried oregano
1/2 teaspoon cayenne red pepper
1 jar (4 ounces) diced green chiles, drained
1 can (11 ounces) corn kernels, drained
3 tablespoons tomato paste
16 package directions
Garnish (optional):
1/2 cup fresh cilantro leaves, rinsed and patted dry
Sour cream
Directions
1. In 5- to 5 1/2-quart slow cooker, layer the chopped onion, pork roast and sweet peppers. In a medium-size bowl, stir together the tomatoes, cumin, garlic salt, oregano and cayenne pepper. Pour evenly over the mixture in the slow cooker. Add chiles and corn.
2. Cover slow cooker; cook on high heat for 5 hours. Remove pork roast to cutting board; keep warm.
3. Remove 11/2 cups liquid from pot and discard. Stir the tomato paste into the vegetable mixture in the slow cooker. Cover; cook for another 30 minutes.
4. Cut the pork roast into slices (see photo 1, at right). Shred the slices using 2 forks to pull the meat apart (photo 2). Add the shredded pork to mixture in the slow cooker (photo 3); heat through.
5. To serve, wrap the pork mixture in the warmed corn tortillas, dividing the mixture equally among the tortillas. Garnish each serving with fresh cilantro leaves and sour cream, if desired.

One fun Week
This past week we did a lot of fun things. On Monday we took the kids to Chuck E. Cheese. The girls see Chuck E. Cheese commercials on tv all the time and always ask me if we can go. I finally gave in and took them. It was actually pretty nice because we had the whole place to ourselves the whole time. The girls had a blast and still ask me everyday if we are going to go back to Chuck E. Cheese today.
Hope and Karma enjoyed this ride, but Sadie was to scared to get on.Sadie talking to Chuck E.

Than on Thursday we took them too the zoo. We had a blast and spent almost 4 hours their. The weather was really nice and the kids all behaved. It was also nice that most of the animals were out, usually it is too hot so the hide in the shade.
On Saturday, Curbris and I, took the girls to go see their first 3-D movie, How To Train Your Dragon. It was a good movie and the girls enjoyed it. My only complaint about the 3-D experience is that they need to make 2 sizes of glasses. Poor Sadie had to keep fixing her glasses and towards the end of the movie she just took them off. So I believe if they are going to make kids movies in 3-D they need to also make kid glasses.
