Bad Table Manners

Last night at dinner time I got the girls there food and went into the other room to answer the phone. When I went back into the kitchen I found Sadie with her feet on the table enjoying her salad.

Chicken Sopa and Homemade Rolls

Chicken Sopa is one of my favorite things to make it is super easy and it reminds me of when I was little. Growing up I would always request it when my mom would ask me what I wanted for my birthday dinner. Whenever I tell people the recipe they tell me that it is chicken enchiladas, but it is not what I consider enchiladas. This recipe doesn't have a lot of ingredients and I usually serve it with a salad and rolls. It also make great leftovers it always seem to taste better the next day. I hope you enjoy.

Here are the ingredients that you will need. Shredded chicken, chicken broth, can of green chilies, small can of cream chicken, big can of cream chicken, cheese, tortilla chips. I will post the recipe below with exact ingredients and instructions.

In a pot mix green chilies, chicken broth, and cream of chicken. Simmer for a few minutes.

In a baking dish layer tortilla chips, chicken, soup mixture, and a little cheese. Make 3 layers and than cover the top with cheese.

Bake at 350 for 30 to 40 mins. it depends how melted you want your cheese. I like the cheese to brown a little.
Chicken Sopa
3 to 4 chicken breast boiled and shredded ( about a pound)
1 cup of chicken broth (just save a cup of liquid that you boiled the chicken in)
1 can of diced green chilies (4 oz)
1 small can of cream of chicken (10.5 oz)
1 large can of cream of chicken (26 oz)
1 bag of tortilla chips
2 cups of cheddar cheese ( I usually use just a little more than 2 cups)
In a pot mix green chilies, cream of chicken, and chicken broth. Simmer for a few minutes. In a 13x9 baking dish layer tortilla chips, chicken, soup mixture (around 2 and half cups), and a little cheese. Repeat 2 more times and than cover the top with cheese. Bake at 350 for 30 to 40 mins. or until the cheese is melted. Let it cool for a few mins. and than enjoy.
Homemade rolls
I was going to make the 30 min. roll recipe, but it called for a lot of yeast and I didn't have enough, so I found another recipe. It isn't 30 mins., but it is a pretty quick roll recipe. I found the recipe for both rolls on Real Mom Kitchen's blog. With the recipe below I made a dozen big rolls, but you can easily make 2 dozen small rolls.
Molly's Roll
1 cup warm water
1 cup warm milk (just heat it in the microwave for 30 seconds and let it sit while the yeast bubbles)
1/3 cup sugar
1 package yeast (2 1/4 teaspoon)
1/3 cup oil
1/2 T salt
1 egg
flour (about 4 1/2 cups)
In a mixer combine yeast, sugar, and warm water; let it grow until bubbly(about 5 mins.). Add milk and mix. Mix in oil and egg. Slowly add 2 cups of flour, mix and then add salt. Add 1/2 cup flour at a time until it comes away from side of bowl. Let it rise in mixing bowl for about 30 mins. Form rolls as desired and place on a greased cookie sheet. Let it rise for another 30 mins. Bake at 400 for 10 to 12 mins. Brush hot rolls with melted butter.

Happy Anniversary!




Today is my parents 27th wedding anniversary. I am so thankful for such wonderful parents, they have always been a wonderful example to me. Growing up we didn't always see eye to eye, but now that I am a parent I understand and see all that they did for us. I am thankful that they were married in the temple so that we can have a forever family. We love them very much and hope to celebrate many more anniversaries with them.

Preganacy Cravings

This is my third time being pregnant and every pregnancy I have different cravings. When I was pregnant with Karma my biggest craving was for cream slushes from Sonic. I also craved thousand island dressing. With Sadie my biggest craving was for spaghetti o's and peanut butter and honey sandwiches. Now with this pregnancy my biggest craving is for chocolate covered peanuts. I also crave pizza a lot and I really don't like pizza that much. Even thought with each pregnancy I have had different cravings I also have a had some same cravings. Ice cream and mexican food is what I have craved every pregnancy.

It is funny how being pregnant can effect the foods that you eat. There are things that I can't eat anymore due to being pregnant. I use to love macaroni and cheese and now I can't eat it, I feel like throwing up when I see it. Spaghetti O's also gross me out and I rarely will eat peanut butter and honey.

New Calling and Last Campout.

A few weeks ago the bishop wanted to meet with us, so we knew that one of us was probably getting a new calling. I honestly didn't think it was me and Curbris was really hoping it wasnt him. Curbris is the 2nd counselor in the Young Men Presidency and over the deacon. He has been in the YM's for almost 3 years and it is his favorite calling. So when the bishop told him he was going to be released he was a little heartbroken, but he knew the Lord had other things for him to do. So his new calling is Ward Missionary Leader. I know he will do great in this new calling he loves missionary work.

The deacons and teachers had a camp out three weeks ago and Curbris knew that it would be his last camp out he would be able to go on before he got released. So we made sure that he would be able to go. He had a blast, here are some of the pictures he took.

I am glad that he had one last chance to go camping with his boy and thankful for all the time he got to spend in Young Men's.

Wrestlemania

Before we got married I knew that Curbris was a wrestling fan, but it wasn't until after we were married that I just found out just how much of a fan he was. I had watched wrestling a little bit growing up, but my mom really didn't like us to watch it. So I thought I knew a little about wrestling, but honestly I didn't know that much. Did you know there are a total of 5 wrestling shows that come on during the week. Monday is Raw, Tuesday is ECW, Thursday is Superstars and TNA, and Friday is Smackdown. Every show is part of the WWE, expect for TNA which is a show that was made by old wrestlers from the WWE. When we first got married we did not have cable so we could only watch Smackdown, but now that we have a cable and a dvr so we never miss a show. At first I wasn't much into it, but now I have to admit I really enjoy watching it(don't tell my husband). Now that the girls have gotten older Curbris thinks it fun to teach them to wrestle. I can only imagine how he is going to be once our son gets older. I took a few pictures of the girls wrestling with their daddy.

Happy Birthday Hopies!

Happy Birthday Hope. Today is my niece's 2nd birthday, so we spent the day with her. My sister took the day off from work, so we took the girls to go eat at Peter Piper Pizza. After we got done eating we took them to the mall to play on the playground. It is still way to hot to play outside so it nice that the malls have little playgrounds. Since Sadie and Hope's birthday is only a month and 9 days apart we are going to throw a party for them in a few weeks.

Girl's Bedroom

We went to El Paso a few weeks ago and my Aunt Lisa gave me two little shelves that she didn't need anymore. I knew they would go great in the girls room. My Aunt Char had also given me a bunch of books for the girls and I had no place to put them, so I knew they would be perfect for that. I used one bookshelf for the books and the other one for toys. Once I got everything organized and put away Sadie thought it would be great to mess it all up. So I have done my best to keep their room organized, but it is pretty much impossible.

This is the shelf I used for the toys. It has made difference and now there aren't as many toys scattered all over the floor.

Blah!!!

Lately I have been feeling really out of it and just have no desire to sit down and post anything. This week I am determined to get back on track and get caught up on all my posts. We have done a little traveling in the past few weeks. We went to El Paso one weekend for my cousins wedding and for Labor Day weekend we went camping. I hope to post theses and few more random things this week.

Today I went to the doctor again for my 4 week check-up and everything looks great. I really didn't want to step on the scale, but actually my weight is starting to slow down. I have one more 4 week check up and than it will be time for 2 week check ups. Honestly this pregnancy is just flying by and I am getting really excited. Of course I am little worried of how am I going to handle three kids and the oldest only being 3, but it will be fun. We are ready for a boy and the girls will be great big sisters.
